Actually, it really wasn't that bad once I discovered all the recipes that I could make with the limited food selection I was allowed. I have pictured four different recipes that I created and photographed during this time. These were just a few of my favorites of the many options available.
First of all, during the detox, the only beverages allowed are water, organic almond milk, and herbal teas. So I looked for a recipe to mix up the rather mundane drink selection. While very simple, this recipe is refreshing and a detox of its own. All it takes is two liters of water, one sliced cucumber, lemon, and ten muddled mint leaves. Let it sit overnight, and tada! You have an invigorating drink fit for, well...a sister that drops by.
Secondly, I rapidly ran into the problem of a lack of breakfast foods. Four days in, I got very tired of eating two unsalted, hardboiled eggs for breakfast each morning. However, oats are allowed on the detox, so I decided to hunt down a recipe with which to use them. I found a recipe for a baked pumpkin oatmeal. This was probably my best find for the entire detox. The recipe is for one serving, so I ended up tripling it. The first batch I made, I cheated and put a little Stevia in it. However, it was WAY too sweet for me and I ended up just not putting any sweetener in the second batch. It was perfect. I took these to work as breakfast, snacks, and even ate them for dessert on occasion. (I baked them in little pottery dishes I had made recently at my pottery class. Muffin tins would work well too.)
Thirdly, a lack of snacks was becoming obnoxious. About three days into the detox, I began going through what I can only describe as withdrawal. I was shaky, cranky, and had a constant headache. I believe this was due to a lack of sugar of any type. Typically everyday, around 3 pm, I eat a small piece of dark chocolate. When 3 pm would roll around, while on the detox, it felt like torture not eating my beloved piece of chocolate. So I decided to fool my body and just eat a healthy “legal” snack at that time. I found the recipe for Chili Lime Roasted Chickpeas. I had honestly never had chickpeas before, but I must say, I was pleasantly surprised at how delicious they are! The great thing about them, is because they are so small, it would take me about fifteen minutes to eat a serving (one piece at a time, of course). By that time, my body was over its little temper tantrum due to the lack of chocolate.
Lastly, having never cooked quinoa, and that being one of the few things allowed on the detox, I decided to whip up a batch. Much like rice, quinoa expands, and I ended up making 3 large containers of it. So I had to get creative and use it in everything. This recipe was a breakfast cereal option that I was quite happy to discover. While very simple, I could almost imagine that I was eating granola and not something that tasted like birdseed. You simply take cooked quinoa and berries and pour almond milk on it, like a regular cereal. The recipe also calls for a tablespoon of your favorite nut butter. Thanks to the help of a wonderful friend, we created something truly glorious. Coconut butter. I cannot even begin to describe how amazing this stuff is. I put some shavings of coconut butter on my cereal, and this became one of my favorite breakfasts and sometimes lunches.
Overall, this has been a successful twelve days. I lost five pounds and I have so much more energy from the lack of toxins in my body. I discovered several delicious recipes that I will continue to use. While this detox is not for the faint of heart, I would highly recommend it to anyone looking to feel better, lose weight, or simply rid their body of toxins.
